White Wine Creamy Gnocchi

Ingredients

2 Brown Onions

5 Cloves of Garlic

2 Cups of White Wine

3 Sprigs of Thyme

250ml Cream

1/2 Kale Bunch

Parmesan Cheese

Black Pepper

Salt

Butter

Method:

In a pan over low medium heat, melt the butter and sweat the onion, garlic and thyme with salt until soft and caramelised. Take it slow.

This is a simple yet full of flavour dish so you do not want to rush it.

Once ready, add the wine and allow it to reduce until the onions are sticky.

Add the kale and cream. Season with pepper and bring to a simmer.

Add the Gnocchi, Grate parmesan over it and serve immediately.

Change it UP!

Add Ons:

  • King Oyster or Swiss Brown Mushrooms

  • Nuts like Flaked Almonds or Roasted and chopped almonds

  • Cauliflower

Swap Outs:

  • Kale: any leafey green of choice

  • Onions: Shallots

  • Thyme: other herbs of preference such as parsley, sage, rosemary, basil.

Serve with:

  • Pork belly

  • Steak of choice (we had it with porter house basted in butter, garlic and thyme)

  • Sausages

  • Crumbed or grilled fish
