I simply cooked some osso buco in the pressure cooker, added some tomato sauce to the stock and boiled some extra vegetables and gnocchi in the broth and voila! Something delicious to keep me warm in these cold days. V2. Although I did not photograph, I kept some additional stock and meat left over and simply boiled some sweet potato and beans in it instead of gnocchi and seasoned with some herbs for a second winter soup.</image:caption>

      <image:caption>Once again, this dish was inspired by something specific and the outcome not the same. Caponata is meant to be served cold; but as it is winter and I wanted something warm and hearty I made this dish which ended up more like a tomatoless eggplant and osso buco ragu. It was absolutely delicious and packed so much deep flavour even though it realistically only took me 30 minutes to make. I served it with an ube mash, it was available and I had never tried to cook with it so I thought I’d give it a go and it turned out great!</image:caption>

      <image:caption>As the final hero to this weeks fingerlickin’ meals, I made this sandwhich. In the pressure cooker, I added capsicum, garlic, smoked paprika 2 lamb shanks, half an onion and topped it up with water. Once it was cooked, I pulled the meat off the bone, seasoned with salt and allowed the sauce to almost evaporate leaving behind just the delicious pulled meat. Between two halves of my ciabatta I put slaw, the lamb and lettuce and once I bit into it I almost did a chefs kiss. Would you have out anything else on these?</image:caption>

      <image:caption>This was so quick to make. In the pressure cooker, I simply put: onion garlic osso buco tomato paste smoked paprika bay leaves covered it in water and let it cook for 40 minutes. I then opened the pot, added the eggplant, and let it cook for another 10 minutes; then, once everything had melted away and all the flavours combined, I seasoned it with salt and pepper and poured a ladle or two of the sauce over some boiled pasta, sprinkled some mozzarella chunks on top and dug in!</image:caption>

      <image:caption>I rarely eat out, but when I do, I like to eat things I don't know how to cook myself or really just have never tried. For a while now, I had been craving steam buns and an Indonesian curry called Beef Rendang. I have never made either of these things, and only ever eaten beef rendang two times in my life, but if you've ever had it, you will know how memorable it is! Though steam buns are often filled with pork or veg and beef rendang served with rice, I decided to satisfy my cravings and put the two in one. (I told a Chinese colleague this, and he said I committed a felony, but to be honest, he doesn't know what he is missing out on haha) They turned out way better than I even imagined, so I have to give you my tweaked recipe for the sourdough steam bun dough so you can have fun with different fillings.</image:caption>

      <image:caption>This week’s pasta 'sauce' was simply made by melting delicious butter on a pan, browning at least a couple sides of some zucchini I cut into cubes and salted generously, then adding a few cherry tomatoes sliced in half and letting that all come together while the tomatoes soften and become sweeter when embracing the butter they have been paired with. Unfortunately, I had no herbs on hand but if I was at home I would've added a few sage or basil leaves to compliment the dish when adding the tomatoes to the pan. Pepper generously when plated and top with some mozzarella if you choose.</image:caption>

To make the sauce, I steamed frozen cauliflower and blended it with fresh parsley, garlic butter, milk salt and pepper. In a saucepan, melt more garlic butter, add a tablespoon or so of sourdough discard (you can use flour instead if you don’t make sourdough), a bit of milk and cook it over medium-low heat, constantly stirring until it thickens. Add the cauliflower mix into the saucepan mix and enjoy!</image:caption>

      <image:caption>The week before last, I went to the shops and found this pre-made gnocchi for just AUD$1.75! Although I have never bought anything like this before, I knew it was a bargain I just had to try - and it was worth it. Here is what I did: Boiled the already-made gnocchi in one pot. I had this steak in my freezer, and I pulled it out to defrost the night before, so it would be good for today. Seasoned the steak with salt and pepper an panfried until good to my liking - this takes less than 5 minutes! I removed the steak from the pan and panfried, onion garlic and capsicums in the beef fat and a little extra olive oil then added kale from my freezer, bottled passata and salt and pepper. I added the gnocchi to the sauce (and kept some plain as well for something else later in the week), and voila! 20 minutes, and I’m eating. I didn’t have any cheese at home but grating some cheese on top would’ve been great as well.</image:caption>

      <image:caption>Over the weekend I cooked a nice big pot of Mexican black beans when a friend came over for dinner, and it was great because I had enough for that night and more! I ate it as nachos and with cauliflower steaks as you can see in this photo. I had some of the plain gnocchi as well so I chucked some of them in to make the dish a bit more filling and that’s it! To make the cauliflower steaks: Coat the cauliflower in oil and spices of your choice. Panfry the cauliflower in oil or butter until golden then finish cooking them through in the oven. Cooking for your future self tip: Because I had to turn the oven on anyway, I used the time while the cauliflower was panfrying to chop up some sweet potato and roast them with the capsicums and the cauliflower to stock it in the fridge and eat throughout the week!</image:caption>
